Bergamo is a medium roast, specialty grade, coffee with a rich, bright acidity and is packed full of chocolate & berry flavours.
Bergamo originates from the Antioquia and Huila departments of Colombia. The cherries (varietals are Colombia, Caturra, Castillo and Typica) are grown at elevations between 1,100m and 1,900m above sea level and are fermented for up to 14 hours before moving to guardiolas (drying patios) for controlled drying to 10-12% moisture.
We created Bergamo because of its lively lemon and orange acidity with caramel and chocolate sweetness reminiscent of the Lombardy region’s love of the Dolce (Sweet) espresso. Importantly for us too is that the coffee is supplied from Racafe, one of Colombia’s leading exporters of specialty coffee, which began life in 1932.
We profiled the coffee in the roaster to ensure we kept its intrinsic flavour profile, born from the terroir where it is grown, hand picked and processed. The idea being to encapsulate this and evoke the thoughts of Colombia and enjoying espresso sat at a table outside a café in the Lombardy region of Italy.
